The effect of heat treatment on the optical properties of honey | Влияние термообработки на оптические свойства медов

English. A series of liquid and, to varying degrees, crystallized poly- and monofloral honeys of different botanical origin and zoning was studied by the methods of Fourier infrared spectroscopy and refractometry in order to identify the influence of heat treatment conditions on tautomeric conformational transformations of gluco- and fructopyranose. There were studied 22 honey samples heat-treated at temperature of 40 and 90 degree C for 20 minutes in a water bath and then boiled. The data obtained showed a linear dependence of the glucose and fructose contents in the samples of heat-treated honey on the refractive index, and the anti-bath extreme nature of the change in their content from the processing temperature. For honey brought to a boil, there was an increase in the fructose content in liquid honey and a decrease in crystallized honey. The opposite process in these two groups of honey took place for glucose. Studies of heat-treated honey by Fourier IR spectroscopy allowed to note a significant change in the optical properties of crystallized samples due to the transition to a liquid state, deactivation of enzymes, and conformation-tautomeric transformations of alpha- and beta-pyranose forms of glucose and fructose, which brought the texture of their spectra closer to the spectra of liquid samples. Due to insufficient knowledge of the diverse and multifactorial properties of honey, the data obtained may be of practical importance in dietetics, pediatrics, gynecology, gastroenterology, cardiology, surgery, burn therapy and other fields of medicine and pharmacology.

Методами Фурье-ИК-спектроскопии и рефрактометрии исследованы серии жидких и в разной степени закристаллизованных поли- и монофлерных медов разного ботанического происхождения и районирования с целью выявления влияния условий термообработки на таутомерно-конформационные превращения глюко- и фруктопираноз. Изучали 22 исходных образца медов, подвергнутых термообработке на водяной бане при t 40 и 90 град. С в течение 20 мин. и далее доведенных до кипения. Показана линейная зависимость содержания глюкозы и фруктозы в образцах термообработанных медов от показателя преломления и антибатно-экстремальный характер изменения их содержания от температуры обработки. Для медов, доведенных до кипения, отмечено повышение содержания фруктозы в жидких медах и снижение в закристаллизованных. Противоположный процесс в этих двух группах медов имел место для глюкозы. Исследование термообработанных медов методом Фурье-ИК-спектроскопии показало значительное изменение в оптических свойствах закристаллизованных образцов, обусловленное переходом в жидкое состояние, дезактивацией ферментов и конформационно-таутомерными превращениями альфа- и бета-пиранозных форм глюкозы и фруктозы, что сближало фактуру их спектров со спектрами жидких образцов. Ввиду недостаточной изученности разнообразных и многофакторных свойств медов полученные данные могут иметь практическое значение в диетологии, педиатрии, гинекологии, гастроэнтерологии, кардиологии, хирургии, ожоговой терапии и других сферах медицины и фармакологии.
