In the last few years, soy has gained increasing importance in the diet of obese, diabetics, professional athletes and all other categories of people who take care of their health because it contains a small percentage of sugar. Whole soybeans have a very low glycemic index (GI), which is a measure of a foods effect on the rise sugar in blood after meal. This paper presents data on the content of monosaccharides, disaccharides, oligosaccharides and carbohydrates obtained in the SP Laboratory, by analyzing samples of soybeans and soybean products from the market in the period from 2017 to 2022.
