English. The possibilities of using lentil flour (LF) in the technology of meat semi-finished products (MSP) were studied in order to increase their nutritional value, improve organoleptic properties and physicochemical parameters. The objects of research were control and experimental samples (CS and ES) chopped MSP from broiler meat and LF, which has undergone preliminary hydration with a water duty of 1:2. KS was prepared according to the recipe of "Osobye" cutlets (the proportion of meat and wheat bread (WB) was 62.0 and 15.6%). The proportion of WB and LF in ES1, ES2 and ES3 was 10 and 5, 8 and 6, 6 and 7%, respectively, and the proportion of the LF in ES4 was 11%. WB was not added to ES4. When assessing the organoleptic characteristics of MSP and finished products, it was found that the texture of MSP of ES3 and ES4 were characterized by density and elasticity. Finished products from these ES had a dark gray color, uniform throughout the mass; pronounced bean flavor and aroma; crumbly texture; regular, stable shape; smooth and even surface. ES2 had a pronounced lentil smell, the view of MSP cut indicated uniform mixing of minced meat (without voids), the color of the products was grayish-brown. Finished products from ES1 were characterized by a sweet odor and delectable flavor, a structured juicy meat texture, light gray color. Persuade to a set of organoleptic characteristics, ES1 was recognized as best. When comparing the nutritional value of CS and ES1, it has been found that the content of protein, fat, carbohydrates, dietary fiber and ash in them is 12.37 and 13.63; 9.28 and 9.40; 10.99 and 8.47; 1.46 and 2.36; 0.90 and 1.08%, respectively. Total acidity, weight fraction of moisture, moisture binding capacity, weight loss during heat treatment in CS and ES1 were: 2.71 and 2.89 °C, 64 and 71%, 54 and 58%, 20.63 and 15.63%, respectively. It has been concluded that the partial replacement in the formulation of minced meat WB MSP (5.6%) with LF (5%) improves the organoleptic characteristics, nutritional value and physicochemical parameters of finished products.

Изучали возможности использования чечевичной муки (ЧМ) в технологии мясных полуфабрикатов (МП) с целью повышения их пищевой ценности, улучшения органолептических свойств и физико-химических показателей. Объектами исследований служили контрольный и опытные образцы (КО и ОО) рубленых МП из мяса бройлеров и ЧМ, прошедшая предварительную гидратацию при гидромодуле 1:2. КО готовили по рецептуре котлет "Особые" (доля мяса и пшеничного хлеба (ПХ) составляла 62,0 и 15,6%). Доля ПХ и ЧМ в ОО1, ОО2 и ОО3 составляла 10 и 5, 8 и 6, 6 и 7% соответственно, доля ЧМ в ОО4 - 11%. ПХ в ОО4 не вводили. При оценке органолептических характеристик МП и готовых изделий установили, что консистенция МП ОО3 и ОО4 отличалась плотностью и упругостью. Готовые изделия из этих ОО имели темно-серый цвет, однородный по всей массе; выраженный бобовый вкус и аромат; крошливую консистенцию; правильную, устойчивую форму; гладкую и ровную поверхность. ОО2 имел выраженный чечевичный запах, вид МП на разрезе свидетельствовал о равномерном перемешивании фарша (без пустот), цвет изделий - серовато-коричневый. Готовые изделия из ОО1 отличались приятным ароматом и вкусом, структурированной мясной сочной консистенцией, светло-серым цветом. По совокупности органолептических характеристик ОО1 был признан лучшим. При сравнении пищевой ценности КО и ОО1 установлено, что содержание в них белка, жира, углеводов, пищевых волокон и золы составляет 12,37 и 13,63; 9,28 и 9,40; 10,99 и 8,47; 1,46 и 2,36; 0,90 и 1,08% соответственно. Общая кислотность, массовая доля влаги, влагосвязывающая способность, потери массы при тепловой обработке у КО и ОО1 составляли: 2,71 и 2,89 ºT, 64 и 71%, 54 и 58%, 20,63 и 15,63% соответственно. Сделан вывод, что частичная замена в рецептуре мясных рубленых МП ПХ (5,6%) на ЧМ (5%) улучшает органолептические характеристики, пищевую ценность и физико-химические показатели готовых изделий.
