Edible films are considered both packaging and food components, they must meet a number of requirements such as: good sensory qualities; high barrier and mechanical efficiency; biochemical, physicochemical and microbial stability, non-toxic, simple, non-polluting and low cost use. Films and coatings made from biodegradable materials are increasingly used in the food packaging industry in response to the growing demand for sustainability and environmental safety. An edible film incorporated with natural antimicrobials is used to control microbial growth in food, leading to extended shelf life and improved microbiological safety of food products. The concept of antimicrobial packaging systems focuses on biodegradable films, mainly polysaccharides and protein-based materials. This work aims to identify the most effective methods of forming edible films using correct associations between their components.
