The by-products of peach processing are: pulp, skin and pits. The peel is characterised by a high content of valuable nutrients, micro- and macroelements, pectin, which can be used in the food industry to obtain new food products. This will allow the diversification of the final food product assortment as functional products, including stopping environmental pollution.
