The effect of low-current spark discharge treatment on the dielectric and electrical properties of plant raw materials | Влияние обработки слаботочного искрового разряда на диэлектрические и электрические характеристики растительного сырья

The permettivity or dielectric properties of food materials are important for understanding the potential changes of these materials when exposed to electromagnetic fields or other electrophysical factors. It is also important for setting up and adapting radio frequency and microwave devices used in the food industry. The aim of the work is to evaluate the changes in the dielectric permettivity and electrical conductivity of apples and carrots under different treatment modes and sample thickness. A measuring cell with plane-parallel titanium electrodes was used to measure dielectric and electrical properties. The treatment was carried out by a low-current atmospheric spark discharge (ASD) with a current value of 1 mA to 4 mA in the frequency range of 1 kHz to 100 kHz. The dielectric permettivity and electrical conductivity are greatly influenced by the magnitude of the discharge current of the ASD treatment. The dielectric permettivity and electrical conductivity of the material correlated with each other and increased as the discharge current increased, followed by reaching a plateau. With an increase in the material thickness, the indicators of the dielectric permettivity and electrical conductivity decreased. To describe and predict the relationship between the dielectric and electrical properties of the ASD treated plant materials, the corresponding dependencies are derived. The conducted dielectric measurements provide new information about the dependence of the dielectric properties of plant materials on their thickness, discharge current magnitude and ASD treatment density in the frequency range.

Проницаемость или диэлектрические свойства пищевых материалов важны для понимания потенциальных изменений этих материалов при воздействии на них электромагнитных полей или др. электрофизических факторов. Это важно также для настройки и адаптации радиочастотных и микроволновых приборов, применяемых в пищевой промышленности. Цель работы – оценка изменения величины диэлектрической проницаемости и электропроводности яблок и моркови при различных режимах обработки и различной толщине образцов. Для измерения диэлектрических и электрических свойств использовали измерительную ячейку с плоскопараллельными титановыми электродами. Обработка проводилась слаботочным атмосферным искровым разрядом (АИР) с величиной тока от 1 мА до 4 мА в диапазоне частот от 1 кГц до 100 кГц. На диэлектрическую проницаемость и электропроводность большое влияние оказывают величина тока разряда обработки АИР. Диэлектрическая проницаемость и электропроводность материала коррелировали друг с другом и увеличивались по мере увеличения тока разряда с последующим выходом на плато. С ростом толщины материала показатели диэлектрической проницаемости и электропроводности снижались. Для описания и прогнозирования связи между диэлектрическими и электрическими свойствами обрабатываемых АИР растительных материалов выведены соответствующие зависимости. Проведенные диэлектрические измерения предоставляют новую информацию о зависимости диэлектрических свойств растительных материалов от их толщины, величины тока разряда и плотности обработки АИР в частотном диапазоне.
