Abstract: Dietary recommendations for preventing heart disease, and recipes that are lower in calories, fat, sodium, and sugar than traditional recipes are presented in this cookbook from the Texas Heart Institute. Research on the link between diet and heart disease, hypertension, obesity, diabetes, and certain forms of cancer, is summarized. The principles of behavior modification and other weight reduction techniques are described. Nearly 100 luncheon and dinner menus and accompanying recipes consistent with the recommended dietary guidelines were developed by 16 Houston area restaurants. Luncheon items include fruit salads, fish soups and stews, seafood salads, and light seafood and chicken dishes. Light dinners (seafood, chicken, meat) and complete dinners (shellfish, fin fish, chicken, meat, rabbit and game) are also presented.

Recipes also include exchange information for use in weight control and diabetes mana gement. Exchange patterns ranging from 1,000 to 3,000 calories; tips for decreasing fat, sodium, and sugar, and for increasing fiber; a medical glossary; and a subject index are provided.
