A technical report reviews published reports concerning the major contribution of salt in processed foods to sodium (Na) intake in Britain, Finland, the US, and other affluent countries. Data are included on: the sources of dietary salt in Finland and other countries; estimates of the use of table salt; dietary salt intake in Britain as assessed by urinary excretion; and the Na content of processed food on a caloric intake basis. A scheme for assessing the sources of dietary salt is included.(wz)
