Evaluation of proteins isolated form Cassia uniflora as a source of plant protein

The proximate composition and amino acid profile of a protein isolate prepared from Cassia uniflora Mill (Cassia sericea Sw) were determined. The isolate, which contained 725 g kg-1 protein, was rich in lysine and limiting in the sulphur and aromatic amino acids and leucine. The antinutritional factors phytates and phytohaemagglutinins (PHA) were not detected. Among the other antinutritional factors, the content of polyphenols was moderately, high whereas trypsin and chymotrypsin inhibitory activities were very high, in spite of which the protein isolate had a high (93.6%) in-vitro protein digestibility (IVPD).
