An overview of the subject of nitrites and nitrates in foods focuses on these topics: fate of nitrate and nitrite in humans, hazards to health from ingestion of the substances, their presence and safe levels in food and water, and infant feeding. Conclusions are stated about nitrate content of vegetables and tolerance levels for infants. Infant feeding practices that should be adhered to are listed. In Australia at the present time, there is little danger of nitrite toxicity.
