Potatoes are nutritious, furnishing significant amounts of carbohydrate, vitamin C, thiamin, potassium, iron and other nutrients. They are almost fat-free and provide about 95 calories per medium-size potato. As a world food crop, potatoes are only a little less important than grains and corn. Potatoes are easy to grow, keep well, and often several crops can be grown in succession. Potatoes do have disadvantages, however; they are high in water, thus less concentrated and they must be grown vegetatively rather than from seed. Potatoes were first dried for the army in World War II. Another milestone was reached when they were deepfried prior to freezing. This is the top selling form of frozen food; 5 billon pounds are consumed annually, mostly made from the "Idaho" potato. Special chipping potatoes are used to make potato chips, the second most popular form of potato. Dehydrated potato items are in the no. 3 spot. The fastest growing dehydrated potato items are specialty casseroles such as scalloped, au gratin, creamy stroganoff potatoes and many other variations of these. (emc)
