Development of a sensory profile for the specific denomination "Galician potato"

The Specific Denomination "Galician potato" was established by the Regional Government of Galicia (Spain) in 1998. This denomination covers the production areas of Vilalba (Lugo Province), Bergantinos (A Coruna Province) and A Limia (Ourense Province). However, the sensory specifications published with the original declaration (Diario Oficial de Galicia, 3 July 1998) show poor specificity, and it has proved necessary to develop a more detailed sensory profile. Here we report the development of this profile, after first selecting the descriptor set and confirming the efficacy of the panel of assessors. The results obtained indicate that potatoes from the three regions show very similar characteristics, except as regards raw potato skin colour and surface roughness.
