The trace element and macronutrient content of meals-on-wheels

The content of trace elements and macronutrients of 35 different "meals-on-wheels" was analyzed as part of a larger study of the nutrition of elderly in Great Britain, and the contribution of these meals to the dietary nutrient intake of 7 housebound elderly persons was calculated. The results indicated that the meals provided adequate levels of energy and protein, and of Ca, P, K, and Fe; however, intakes of Cr, Cu, Mg, Mn, and Zn were lower than recommended levels. The results also indicated that the meals provided a relatively high level of Na. The nutrient data are summarized and nutritional adjustments for these meals are suggested.(wz)
