Germination and relative nutritive value of corn meal and corn chips

Corn meal made from corn germinated for 4 days had higher niacin and riboflavin contents than control corn meal, as determined by microbiological assay, whereas the thiamine content remained about the same for both meals. The relative nutritive value of the corn meal made from germinated corn was significantly higher (86%) than that of control corn meal (69%). Processing the germinated corn meal into corn chips decreased the levels of vitamins and relative nutritive value, but these values remained higher than the control chips. Taste panel members objected to bitterness and an earthy flavor in the corn chips made from germinated corn.
