A growing demand for "surrogate servants"

Anticipated changes in the food service market in the 1980's will follow demographic and life style changes. Matured, postwar baby boom children will expect more service and better quality food and decor than fast food service provides. Their new, conservative eating styles reflect values placed on food safety, nutritional food and smaller portions. Household size is decreasing. The one-to-two person household eats out more often than larger households with less mobility or flexibility. People are eating more meals per day and at more flexible hours. Individuals' improved educational level leads to greater expectations from the eating experience in terms of service and quality. The increased number of women in the work force will increase demand and reliance on away-from-home food preparation and consumption. Women's advancement to better jobs and the growing number of two-income families will increase the discretionary income needed to purchase surrogate servants. Current demographic and economic information and projections are shown.
