Rapid method based on computer vision to determine the moisture and insoluble impurities content in virgin olive oils

In this work, a computer vision system was applied to estimate the content of moisture and insoluble impurities in virgin olive oils, determinations that are taken into account in the olive oils trade and they also are key parameter to optimize the oil extraction process. This prediction value obtained by the machine vision was compared to the current determination method which is characterized by long time consuming, considerable expenditure of organic solvent and energy. A high positive correlation was obtained between current method and the proposed method by artificial vision with a determination coefficient (R²) of 0.996. This artificial vision method is a non-destructive analytic method and allows a fast, low cost and objective prediction of moisture and insoluble impurities content. Therefore, this result demonstrates that the artificial vision is a useful method for moisture and insoluble impurities determination in virgin olive oils.
