The sodium content of foods which are processed or served in restaurants, especially fast foods, is high. One may not be fully aware of the amount of sodium found in most foods. Sodium in food often can't be detected by taste alone, especially in processed foods, which are the number 1 source of sodium in today's diet. Sodium comes from salt, flavoring agents, additives and preservatives. Foods with high sodium content tend to be high in sugar also. Manufacturers often are not aware of the sodium content of many of their products, and the federal government doesn't require sodium labeling. Sodium comes from other sources besides food. Water softeners and tap water contribute to sodium intakes, as do antacids, laxatives, and over-the-counter medicines. The authors of this article have published a book that lists the sodium content of brand name foods. (kbc)
