Zinc deficiency in the West of Scotland? A dietary intake study

The dietary intake of zinc was measured in the West of Scotland to determine whether subclinical zinc deficiency is widespread. Using absorption spectrometry, the zinc content in 96 food items comprising the local standard diet for 1 week's dietary intake was calculated. Findings demonstrated that the diet contained less zinc than the recommended dietary allowance. Dietary zinc could be increased by substituting wholemeal flour for white flour in the diet, although pregnant and lactating women would still be zinc deficient even with diet improvement.
