Plate waste study finally made public

The Food and Nutrition Service comprehensive study on plate waste in the school lunch program includes these findings: milk was the most accepted food; most Type A lunches provided less than 1/3 of RDA for iron, thiamin, and food energy, but adequate RDA for vitamin A, riboflavin, niacin, phosphorus, calcium, and protein; plate waste meant students actually consumed inadequate amounts of nutrients; and on-site meals generally scored higher in all categories. A number of programs have been instituted to improve school lunch consumption, involving food service personnel, community members, and all members of the school community--teachers, administrators and students.
