In this article we explain the statistical background for the calculations necessary to obtain sample sizes for food control and monitoring. We present a case study of the calculation of a sample size of eggs in order to detect the exceedance of a legal limit. The description of sample sizes in the AVV LmH (German General Administrative Provision on Food Hygiene 2009, see annex 2) on which repeated inquiries occurred, are discussed and commented.
