Studies on the extent of dietary fiber intake in West Germany

Food diaries were used to determine the daily crude fiber and dietary fiber consumption of 150 healthy West Germans from 4 different occupational groups: factory workers, high school students, high school teachers, and administrative employees. Mean daily dietary fiber consumption in the 4 groups, respectively, was 22.0 g, 24.8 g, 21.7 g, and 17.6 g. In 17% of all subjects, daily fiber intake was 15 g or less. A wide range of variation was observed between individuals. The extent to which foods with different fiber contents were eaten was reflected by dietary fiber intakes per 1000 kcal, which ranged from 5-14 g and were significantly higher in students and teachers. The percentage contribution of cereals, vegetables, potatoes, fruits, and other plant foods to total dietary fiber intake also differed among groups. Intra-individual consumption of high-fiber foods varied greatly, but in general, dietary fiber intake was considerably dependent on total energy intake.
