The trace element composition of human diets is reviewed and discussed as follows: effects of geochemistry on the mineral content of the diet; interdependence of nutrients; altered mineral compositions in synthetic and refined diets; and supplementation or fortification of diets with trace minerals to ensure adequate intakes.
