The biophysics of digestion: lipids

There has been a considerable emphasis on improving our understanding of the biophysics of digestion by food, nutrition and pharmaceutical scientists in recent years. An improved understanding of the physicochemical basis for the breakdown of food matrices, the colloidal structures formed, and the bioaccessibility, transformation, and absorption of bioactive agents within the human gastrointestinal tract could lead to foods, supplements, and pharmaceutical products with enhanced efficacy. This article reviews recent advances in our understanding of the complex biophysics of lipid digestion.
