Intake of nutrients, phytin P, polyphenolic compounds, oxalates and dietary fibre by university campus residents

Dietary survey of ninety families, thirty each from low, middle and high income groups of Punjab Agricultural University Campus, Ludhiana was carried out during the winter of 1990. Per caput nutrient intake was calculated using Indian Food Composition Tables. The antinutrients namely phytin P. oxalates, polyphenolic compounds and dietary fibre were calculated based on analysis of collected food samples from one third of the families surveyed. Diet of low income families were inadequate in all the nutrients except for Vitamin C. The daily consumption of iron in all income groups (13.3-17.9 mg) was far below the recommended level while the intake of other nutrients was more than ICMR's recommendations in middle and high income groups. Energy content of middle income families (2271 +/- 335 KCal/d) was marginally adequate. The antinutrients increased with an increase in family income. The phytin phosphorus content in the diets was positively associated with cereal consumption. Intake of polyphenolic compounds, oxalate and neutral detergent fibre (NDF) showed significant positive correlation with cereals, roots, tubers and leafy vegetables. As these foods are the primary sources of energy, beta carotene and vitamin C, these nutrients were also significantly and positively associated with antinutrients.
