Changes in Contents of Some Heavy Metals in Common Vegetables from Local Markets Over 13 Years

Heavy metals in small quantities in plants and humans can provide benefits but at higher concentration harm to both. There are Fe and Zn deficiencies in Egypt. Concentrations of Cu, Fe, Mn, and Zn were tested in 29 vegetables to determine if there were changes from 1998 and 2011. There was variation in heavy metal levels over time. There were decreases in Cu content in 9 vegetables; increases in 2, and no change in 18 over time. There were decreases in Fe content in 9 vegetables; increases in 14 crops, and values were unchanged in the remainder over time. There were decreases in Mn content in 6 vegetables; increases in 9, and the remainder were unchanged over time. There were decreases in Zn content in 14 vegetables; increases in 6 and the remainder did not change over time. The decrease over time was greatest in Cu followed by Zn, Mn, and Fe. Potato exhibited consistent decreases across metals and spinach exhibited consistent increases for all metals. Reasons for the various responses needs to be determined.
