Minerals play a role in human disease processes, and conversely, disease may affect the mineral content of tissues. Complex interactions exist between dietary minerals, infectious disease, and environmental toxins. Abnormal mineral concentrations may be a cause, or an effect, of disease. This nutrient-disease interrelationship has been recognized for such minerals as calcium, phosphorus, zinc, copper, magnesium, manganese, selenium, and iron. Studies have demonstrated that disease affects the concentration, function, distribution, and excretion of these minerals. More research is needed concerning interactions between minerals and disease, and the consequences of mineral disturbances on human nutritional status. (nzm)
