A model to estimate thermodynamic properties of biological materials during freezing

A model for calculating the enthalpy of biological materials during freezing, based on the freezing point depression of solutions, was derived to include the temperature dependence of the heat capacity of ice, the latent heat of fusion, and the fraction of soluble solids. Parameters necessary to calculate enthalpy at a given temperature were moisture content, bound water, effective molecular weight of soluble solids, and the fraction of soluble solids. The soluble solids fraction and the molecular weight were combined into a solute ratio and estimated from data where the freezing point, bound water, and moisture content were known. The model was determined to be accurate (RMS standard error = 2.29 to 4.48 kJ/kg) for surimi. The model was applied to enthalpy data for 26 products using nonlinear least squares regression (standard error = 0.6 to 4.1 kJ/kg) and values for the solute factor and bound water were estimated.
