Artificial vanilla in baked products subject of study

The results of a research program initiated by a laboratory that develops flavorings for the baking industry are reported. Artificial vanilla formulated for use in baked goods was specifically evaluated in cookies. The testing was conducted in three stages, with both children and adults as panel members. It is concluded that an artificial vanilla flavor can be formulated to fit various price categories, but that recommended use levels balance price. Research evaluation sheets are included.
