A computerized school lunch menu-planning model for Hawaii elementary schools

This study formalized the conventional menu-planning process of the Hawaii Department of Education. School Food Services Branch (SFSB), into a computerized model. The model sought the minimum cost of satisfying the nutritional goals of the Recommended Dietary Allowances (RDA) for grades 4 to 6, Dietary Guidelines for Americans (1995), and federal regulations for grades 4 to 6 (1996); the U.S. Department of Agriculture (USDA) meal pattern requirements for grades 4 to 6; course structural constraints; intra-meal compatibility requirements; separation constraints; and frequency constraints. By employing the computerized model, a five-week cycle menu was generated for grades 4 to 6 in Hawaii. The computerized cycle menu provided a better nutritional balance at a lower cost as compared with the 1997-98 SFSB cycle menu. The average cost per lunch of the computerized cycle menu was 60 cents, 23.1 percent lower than that of the SFSB cycle menu (78 cents).
