On-line color measurement and baking oven control

A recent technological advance (known as "Qual-Probe") offers volume-baked-goods-manufacturers the ability to reliably control the quality of their products simply and rapidly at an easily-justified cost. The Qual-Probe system is an on-line system for continuous measurement of the depth of color of baked products. The system uses light-emitting diodes, photodetectors, and a microprocessor. The product color is automatically measured, and the system indicates if it is under or over baked. Characteristics and functions of this automated, reflectance-sensing system are illustrated. The Qual-Probe system is currently in use in the United Kingdom and England. (wz)
