The Case against fast foods
1983
Liebman, Bonnie
The nutritional value of fast food meals is discussed. Calories are high in most fast food meals; people use up 1/2 of a daily caloric allowance to get 1/3 of the USRDA. Fat accounts for 40-50% of the calories and much of this fat is saturated. Fast foods have a high sodium content. Vitamins A and C are minimal as is fiber. Fast food meals are usually fried and offer limited variety. A list of more nutritious alternatives to current menu items provides suggestions (e.g., whole wheat buns) for increasing the fiber and nutrient content, and decreasing calories and fat content in fast foods.
