How science sees the potato chip
1978
Deutsch, Ronald
Some common misconceptions about potato chips are refuted in answers to several questions. The chips do have a useful role in nutrition. A typical small one-ounce bag of chips has most of the nutritional values found in about 3.5 ounces of fresh potato. Nutrition scientists refer to them as auxiliary foods which offer valuable contributions to nutrition. A panel of nutrition information from a typical chip package is shown. Questions concerning fat content, salt content, consumption rates, and nutrients in chips are also answered.
