Production of high quality weaning products from maize--cowpea--crayfish mixtures

Three weaning food mixtures were prepared from maize, cowpea and crayfish namely, Diets 1, 2 and 3. Cowpea provided 16.25%, 32.50% and 48.75% of the proportion of ingredients in the diets. The protein content of the diets were 12.3% in Diet 1, 16.2% in Diet 2 and 18.2% in Diet 3. An established commercial infant weaning food served as the standard. Increase in the quantity of cowpeas in the diets above (16.25%) reduced the weight gain, PER, NPU, and BV of rats examined. The processing method used in preparing the cowpeas was found to be adequate as the trypsin inhibitors were destroyed and pancreas and liver weights were not affected. It is recommended that Diet 1 which contained 16.25% cowpeas, 48.75% maize and 5% crayfish should serve as the basis for formulating cheap but nutritious infant weaning food.
