Use accounting records to spot trends

Accounting records contain vital information about daily sales, purchases and operating costs that can be useful throughout the month, in day-to-day decisions. Flexible formats for information should be developed, so that time will not be spent in copying information onto another form. A key document is a daily sales listing, by meal period, which can be used for tracking sales trends and making various comparisons. Purchasing/receiving reports can be used for a "quick and dirty" estimate of food cost. Payroll sheets are the primary document for following labor costs. Daily management reports can be modified to include daily sales by outlet and by meal period, comments on the weather and details pertinent to a sales shift. Computers are gradually changing the emphasis on data analysis and the type of information and records accumulated. (emc)
