The mechanical role of digestion and its place in nutrition are discussed. The cell is the basic unit of the human body and is the recipient of food digested by the body. The digestive process, including the absorption of nutrients and their conversion to energy, is explained. Three nutrition experts, John Canham, Howard Sauberlick, and George Briggs, present their views on fiber, carcinogens, food additives, vitamins, and the relationship between vitamin E and sex. The schools should be a major source of nutrition education, and the relationship of mind, body, and nutrition should be emphasized.
