The relationship of the number of fat cells in adipose tissue to overnutrition and obesity is addressed. Procedures for using the amount of DNA in an organ or tissue to determine the number of cells are described. An analysis of the human kidney illustrates that care must be taken in drawing conclusions about the efficiency of an organ from the number of cells in it, without considering its size, structure, and performance relative to the body from which it came.
