Lettuce is the second most abundantly produced fruit or vegetable consumed by humans in the U.S., and the call for fresh garden greens in restaurants today is perpetual. Salad sales climb along with the temperature and merchandising ideas are provided from the Black Oak Restaurant in California. Recipes and photographs are included for Chef Salad and Nectarine Slaw.
