FDA's Total Diet is the most comprehensive analysis of "table ready" foods in the American diet ever performed. Since 1961 The Study has measured levels of various substances in kitchen-prepared foods rather than raw or unprocessed commodities. Table-ready foods give a more accurate picture of the actual American diet. New and improved methods for measuring low levels of several hundred chemicals that might be present in food are described. The Total Diet Program supplements FDA's routine surveillance programs and serves as an early warning system for contamination incidents. About a dozen previously undetected pesticides have been found since the study was initiated. Essential minerals of the diet are also evaluated. Iodine intake has been shown to be several times the RDA for all groups. Once thought to be deficient in many areas, iodine is now excessive in US diets. FDA has trained a number of foreign chemists in Total Diet analytical procedures. (emc)
