Study of macro and micro mineral nutrient contents of some cultivars of ragi (Eleusine coracana Gaertn)

A food analysis study assessed the content of macro (Ca, K, S, Na, P, Mg) and micro (Fe, Mn, Cu, Zn) mineral nutrients in 14 ragi cultivars. The brown and white varieties were found to be excellent sources of these minerals. Ragi cultivar JNR-1008 was found to contain these minerals in an appropriate quantity, and can be used in the preparation of nutritious, low-cost, ready-to-eat foods.(wz)
