Effect of legume carbohydrates on protein utilization and lipid levels in rats

Extract: Incorporation of carbohydrates prepared from different legumes as a sole source of carbohydrate in the diet promoted a growth rate comparable to that of corn starch. The percent nitrogen retention was not adversely affected by the addition of legume carbohydrates. The lower values obtained for apparent digestibility of the protein on legume carbohydrate diets may be explained by the increased endogenous excretion on these diets. The total serum cholesterol levels were lower in rats fed legume carbohydrates than those fed corn starch.
