Whitney, E.N. | Rolfes, S.R. | Sizer, F.S.
A technical review focuses on non-nutrient food components, other than fiber, that are reputed to have beneficial health effects. Following a discussion of 4 warnings concerning the potential health risks of non-nutrient food constituents, attention is given to several such constituents, viz.: alfalfa, ginseng, caffeine-containing foods, wine, garlic, hot peppers, cabbages and other cruciferous vegetables, seeds and grains, yogurt, and several other foods. A tabulation of plants for which non-nutrient health claims are made is included.(wz)
