A versatile computer package for the simulation of the open-loop dynamic response of a multiple effect evaporator for the concentration of liquid foods is presented. It is based on a nonlinear mathematical model, which consists in material and energy balances associated with the various elements of the system. This model includes the possibility of simulating pure delays and the preheating of the fluid feed stream, yielding a very general and powerful tool for the analysis of industrial units. An illustrative case study is detailed in the present paper, corresponding to an industrial scale triple-effect evaporator for the concentration of apple juice. Excellent agreement is found between the experimentally determined response of the unit to large disturbances in steam pressure and feed flow rate, and the predicted response based on the computer solution of the mathematical model.
