The Effect of wheat bran on the intake of energy and nutrients and on serum mineral levels in constipated geriatric patients

The nutritional consequences of large dietary supplements of ordinary bran and equivalent amounts of fiber (as low-phytic acid bran) on energy and nutrient intake and on serum and urinary mineral levels were examined. After a 5-day control period during which intakes were measured, 10 constipated, hospitalized geriatric patients (7 females, 3 males; ages 70-89) were placed on the test diets. After 6 and 12 weeks intakes were again measured for 5 days. Serum calcium, magnesium, zinc, and iron levels did not decrease when wheat bran was added to the high-mineral hospital diet, while energy intake decreased in only 2 of the women on bran treatment. No difference in serum mineral levels occurred when low-phytate bran was used in place of ordinary wheat bran. (wz)
