The use of Kluyveromyces fragilis for the extraction of orange peel pectins

Samples of orange peel were inoculated with the yeast Kluyveromyces fragilis and the yield and composition of the extracted pectin was monitored over a 3 d fermentation period. A maximum yield of 12.8% from dry albedo pulp was obtained after 24 h. The yield and the molecular weight distribution (measured by gel permeation) of the released pectins did not vary greatly over the 3 d process. Gas chromatography of the alditol acetates of the constituent monosaccharides present in the pectins showed that the highest rhamnosyl and galacturonide content coincided with maximum growth of the yeast. The glucose content of the pectins decreased throughout the extraction process.
