Influence of pH on the binding of copper, zinc and iron in six fiber sources

The binding of endogenous copper, zinc and iron in wheat bran, corn bran, soy bran, oat hulls, rice bran and cellulose was examined via incubation under the following pH conditions: 1) pH 0.65; 2) pH 6.8; and 3) a sequential treatment of pH 0.65, neutralization, then pH 6.8. After treatment 1, little of the minerals remained bound in the residue, while after treatments 2 and 3, most of the minerals remained bound. The results indicated that endogenous minerals were rebound when the pH was raised from very acidic to only slightly acidic. The titrations showed that protein influenced the hydrogen ion buffering capacity. When the protein was removed, other physiochemical properties appeared to influence the buffering.
