Plasma glucose and insulin responses to orally administered carbohydrate-rich foodstuffs

Varying loads of carbohydrate-rich foods were administered in controlled experimental diets to 8 normal young adults to determine the differences in carbohydrate utilization as reflected in plasma glucose and insulin response. After a standardization period, each subject received a different test meal containing 300 kcal of energy content from potato, bread or rice. Blood tests were done 6 times over a period of 3 hours following the meal. The response to potato was similar to that for a standard oral glucose load. There was a slower and weaker response to rice, with bread stimulating the least response. These differences in response to dietary carbohydrates may be due to rate of gastric emptying, availability of starch for digestion, and variations in carbohydrate content of the foods.
