Calculated versus analytical nutrient values of diets in research studies

A dietary study compared the nutrient content of 4 diets as determined by laboratory analysis vs. calculated from Canadian food composition tables. Differences were noted between calculated and analyzed values for fat content. The error in the calculated values is attributed to the effects of agricultural practices, and to storage and preparation conditions.(wz)
