Extract: Sugar, in one form or another, is found in more foods than any other food constituent. Sucrose is the most popular sweetener, and glucose is the second most popular. Recent technologic developments that have simplified the conversion of glucose to fructose have created a major demand for corn sweeteners. The popularity of sugars is complex and generally agreed to be innate. It is associated with the optimal selection of food. Controlled studies suggest that sugar intake is not associated with hyperactivity in children; however, sugar and other carbohydrates may have some subtle effects on behavior in humans, which are mediated through an increase in brain serotonin.(author)
