Alternatives to sucrose expand sweetener choice

Salient characteristics of high fructose corn syrups (HFCS), polyol sweeteners, crystalline fructose, and conventional sweeteners are discussed. These products have broadened the range of practical alternatives to sucrose. HFCS can replace sucrose in many applications not requiring solid sugar. It is sweeter than sucrose, so HFCS with 90 percent fructose contributes fewer calories. Polyols include sorbitol, mannitol, and xylitol. They are useful in products for diabetics because their primary metabolism requires no insulin. Corn-derived sweeteners are utilized in almost every food category.
