The nutritive value of tropical fruit like coconut is of interest to the consumer and its breeding program is essential in Thailand. Two experiments were carried out in Completely Randomized Design with three replications. In the first experiment, the essential and non-essential amino acid contents of liquid and solid endosperm of potentially marketable cultivars were studied. It was found that among 18 amino acids, significant differences were found in aspartic acid, cystine, serine, isoleucine, and phenylalanine content. Highly significant differences were found in histidine and methionine contents. The second experiment aims to determine the fatty acid composition in virgin coconut oil of 20 coconut accessions, from the coconut field gene bank of Thailand at the Chumphon Horticultural Research Center. The result showed that there were significant differences on all 8 fatty acids. Lauric acid, the most important acid for the consumer, was found at excellent level (>49%) in the cultivars of ‘Chumphon Hybrid No.2’, ‘Sawi Hybrid No.1’ (MAWA), ‘Hybrid Chumphon 60’, ‘Renell Tall’, ‘Malayan Yellow Dwarf’ and ‘Thai Red Dwarf’. These cultivars were recommended for VCO processing.
